The food industry requires a variety of modern heat exchange equipment that performs process technology to ensure regulated product quality. Pasteurization or heat treatment of a product is an important process in any food production, allowing the destruction of pathogens and pathogenic bacteria. Product cooling is a subsequent process necessary to create conditions for long-term storage of the product. All these processes are feasible in special heat exchange equipment.

A pasteurizer is a heat exchanger, into one of the circuits of which a product that requires heat treatment is supplied, and a heating medium, such as steam or high temperature water, is supplied to the other circuit. Different environments require different pasteurization temperatures and product holding times. On average, pasteurization temperatures range from 60 to 90 ° C.
It is possible to heat the product to higher temperatures (above 100 ° C), which is carried out in such heat exchangers, but this process is already called sterilization, since the number of pathogenic bacteria tends to zero after this heat treatment.
Pasteurizers are widely used in the food industry for heat treatment of products such as vegetable and fruit juices, milk and dairy products, wine, beer and others.
The pasteurizer is structurally a plate or tubular heat exchanger, consisting of several sections, depending on the characteristics of the technological process.
In the standard version, the pasteurizer of OPEKS ENERGYSYSTEM company consists of 3 main sections:
- 1 section - heating, in which the process of pasteurization of the product directly takes place at a pasteurization temperature that is different for different products.
- Section 2 - cooling, in this section the pasteurized product is cooled to the temperature of subsequent use in the technological process.
- Section 3 - recuperation, allows using the heat of the pasteurized product for preheating the product at the inlet of the pasteurization section.
Depending on the specifics of the technical process, some of the sections may be missing or, on the contrary, additional sections may be installed. So, for example, one cooling section in a heat exchanger is called a product cooler. The cooling section is supplied with a coolant, for example, ice water with a temperature of 1 ... 2 ° C or propylene glycol. The coolant cools the product after heat treatment to a storage temperature, for example 4 ° C.
For media such as dairy products, beer, wines, plate-type pasteurizers are often used. However, there are more complex media with high viscosity or high content of suspended solids, fibers, such as ketchup, egg melange, mayonnaise and others. For such media, tube-type pasteurizers are also used.
